Aren’t mushrooms nutritionally barely a step above grass? Doesn’t seem worth the risk.

A lot of people only ever try the boring white ones and get their flavour from other places. They have no fucking idea!

I have to wonder how many of those “I hate mushrooms” people would change their tune if they had a well-cooked king oyster or lion’s mane.

Just the thought of lions mane, fried up in a little butter with some garlic, makes me salivate. An iconic mushroom, seafood of the trees, and it makes my brain feel good too. Last fall we found a hiking trail that was littered with trees growing it. Took a bunch (still left plenty for others) and dehydrated and powdered it. Whenever I’m making a soup or sauce, I throw a spoonful in and it absolutely transforms the dish.

God, I FUCKING love lions mane.

I love me some lions mane mushrooms. Lucky for me, I get them growing in my yard in large patches. And there are morel’s and chicken of the woods in the surrounding forest.
