Signal has a “Note to Self” option which basically lets you send texts to yourself for reminders, etc. Is there a way to do this with any of the various Matrix clients, and if so how?

AFAIK no, but there is an work arround, create a private room, don’t invite anyone, there you go, you got a room with only you that you can use for your notes
i create private, unlisted, encrypted channels for checklists, shopping, clipboard, etc, in a private, unlisted space called “checklists”
I do not think there is option like this but you have two options create empty room without inviting anyone and lock encrypt it. Or create second account adn DM to it :D
