tofu skin, which is generally not sold outside of Asian grocery stores in America, and is a whole different thing (the skin that forms on the soybean milk while forming tofu) and is fucking awesome. If you like the whole “freeze/thaw/press” extra firm tofu for meaty texture I highly recommend you seek this out. A chewy but tender texture that is very meaty and imo is widely overlooked by American vegetarians/vegans. Soy curls are somewhat similar texturally though soy curls are closer to TVP in how they’re made

Soft tofu is already good as it is, too. Lots of dishes are just soft tofu and a sauce and they are great.
White people just have a habit of trying to pretend it is a direct meat substitute and so they do things like bake it into oblivion with minimal seasoning. They then complain about the flavorless pucks.

No, it ruins the texture completely and makes it a gigantic pain to cook. The ice crystals alter it to have the consistency of a dish sponge which makes it tough and too absorbent. Even the taste turned foul like you’d expect from something freezerburned, and this was just after it froze overnight because the fridge got too cold.
Freezing just makes it a different style. Usually double freezing to build up ice crystals. When thawed, this leaves it porous.
It’s good but not better per se. Tofu is already really good before messing with it much. Just gotta cook it right or use the right toppings.

Freezing extracts more water and gives it a “meatier”, more firm texture. Freeze it, thaw and squeeze rest of water out, toss in oil, seasonings, and corn or potato starch, air fry, toss in sauce. Perfect nuggets
